Din-din tonight ---Asian Turkey Meatballs with fried rice

  • 1/4 cup panko crumbs
  • 1-1/4 lbs 93% lean ground turkey
  • 1 egg
  • 1 tbsp ginger, minced
  • 1 clove garlic, minced
  • 1/2 tsp salt
  • 1/4 cup chopped fresh cilantro
  • 3 scallions, chopped
  • 1 tbsp low sodium soy sauce
  • 2 tsp sesame oil
Dipping Sauce
  • 4 tbsp low sodium soy sauce
  • 2 tsp sesame oil
  • 2 tbsp fresh lime juice
  • 2 tbsp water
  • 1 chopped fresh scallion



Preheat
oven to 500°F.


Mix
ground turkey, panko, egg, salt, scallions, ginger, cilantro, 1 tbsp soy sauce, and 2 tsp oil and mix with your hands until combined well.
Shape
1/4 cup meat mixture into a ball and transfer to a baking dish.
Repeat
with remaining mixture.
Bake
until cooked through, about 15 minutes.


For the dipping sauce
mix
together lime juice, water, soy sauce, and remaining 2 teaspoons of oil in a bowl.
Add
scallions.


Transfer
meatballs to a serving dish.
Stir
sauce, then
drizzle
meatballs with 1 tablespoon sauce.


Serve
meatballs with remaining sauce, about 1 tbsp per person. Chances are you won't use all the dipping sauce.


Makes 12 meatballs.

Mad Mad Maddy has two toofers now and she is a crawlin' like none other. She's loving trying new foods and she is a dancing fool!! Loves music! Poker Face - lady gaga is her newest most favoritist song!!

Troy and I ended up going black friday shopping this year and we got ourselves a nice, new TV. And we are enjoying watching TV again for the first time in 2 years almost (old TV antenna outlet didnt work = no TV) So since our little girl is crawling everywhere and grabbing everything we think it is best to hang the TV on the wall. So that'll be our weekend project.

The pets are doing wonderful: Mya has become the greatest addition to the family since we bought her a shock collar (no more running away--BUUZZZZ!) Mocha is hooked on chasing lights and Lucky is still sleeping 24 hours a day lol....lazy one she is.

On the note of dieting I just had a brownie...shame on me.
And the part i'm dreading but it definitely needs done. We are going to try and wean Madison off of swaddling and her pacifier. My little boos boos has to learn the tough life lesson for a baby and figure out how to self soothe. But momma knows best and I wouldn't do it if I didn't believe it's for her own good!

For my health

After the long, difficult pregnancy with Madison and the painful recovery of the c-section my body has taken a toll. So, I am very determined to get this weight off!! Mya has been very helpful so far in becoming my beloved walking/biking buddy.
The number I am going for 153!!!
